Most dishes from the Eritrean-Ethiopian cuisine are not served on plates, but in colourful baskets with injera, a leavened flatbread. For visitors who are not yet familiar with East African cuisine, the mixed starter platter with sambusa and katena is a good place to start, while the Madi platter as a main course provides an exciting insight into the diversity of Eritrean-Ethiopian cuisine.
