"Byliny", the Slovakian word for herbs, not only reflects the variety of flavours in the dishes on offer, but also the special touch with which supposedly familiar home cooking is refined. Lovers of home-style cooking will get their money's worth here. Beef roulade from Hereford beef, served with truffled mashed potatoes, wild broccoli and braised jus, will make your mouth water. Chefs Norman Metzing and Michael Caasmann conjure up German classics with sometimes surprising, sometimes extravagant, but always creative new interpretations. The menu changes every four weeks so that the culinary experience always remains fresh and exciting.
