It all started in an old petrol station in Düsseldorf-Lörick on the left bank of the Rhine. Hin & Weg has been on Carlsplatz since 2011 and the menu is dominated by seasonal vegetables in the form of quiche and salads, such as quiche with chicory, pear and ginger, kohlrabi coconut soup with chervil or trofia noodles with fried aubergines, pickled tomatoes and goat's cheese. There are also meat side dishes here and there, such as meatballs. In any case, there are no limits to creativity when it comes to composition. The dishes are simply ‘good for body, mind and soul’, explain Claudia Holtschneider and Anette Jacobs.
